Pad Thai Noodle Bowl With Sweet Almond Butter Sauce
This recipe features our Modern Table Lentil Penne Pasta for a delightful twist on Pad Thai. The sweet almond butter sauce adds pure deliciousness to every bite!
Pad Thai Noodle Bowl
- Modern Table Lentil Penne
- 2 Red Bell Peppers (thinly sliced)
- 1.5 cups Rainbow Carrots (matchstick cut)
- 1 cup Red Cabbage
- 1/2 tsp. Cilantro (finely chopped)
- 2 Tbsp. Crushed Peanuts
- 2 Tbsp. Sesame Seeds (optional)
- 2 cups Chopped Chicken (cooked)
Sweet Almond Butter Sauce
- 1/3 cup Plain Almond Butter
- 1 Tbsp. Soy Sauce
- 1 Tbsp. Lime Juice
- 1 Tbsp. Molasses
- 1/2 tsp. Rice Wine Vinegar
- 1/2 tsp. Sesame Oil
- 2 Tbsp. Water
- 2 Garlic Cloves (minced)
- 1/4 tsp. Red Pepper Flakes.
Buy the Noodles
Sweet Almond Butter Sauce
- Add sauce ingredients to a bowl and whisk to thoroughly combine.
- Set aside.
Pad Thai Noodle Bowl
- Cook 1 box of Modern Table Lentil Penne Pasta according to instructions on box.
- Cook chicken breasts and chop into bite-sized squares.
- Combine cooked pasta, red pepper, carrot shreds, cabbage, cilantro and chicken in a large bowl and add in a couple of Tbsp. of sauce. Toss to thoroughly coat.
- Divide between 2-3 bowls, drizzle with extra sauce, and garnish with additional cilantro, peanuts, and sesame seeds as desired.
