Pad Thai Noodle Bowl With Sweet Almond Butter Sauce

This recipe features our Modern Table Lentil Penne Pasta for a delightful twist on Pad Thai. The sweet almond butter sauce adds pure deliciousness to every bite!

Pad Thai Noodle Bowl

  • Modern Table Lentil Penne
  • 2 Red Bell Peppers (thinly sliced)
  • 1.5 cups Rainbow Carrots (matchstick cut)
  • 1 cup Red Cabbage
  • 1/2 tsp. Cilantro (finely chopped)
  • 2 Tbsp. Crushed Peanuts
  • 2 Tbsp. Sesame Seeds (optional)
  • 2 cups Chopped Chicken (cooked)

Sweet Almond Butter Sauce

  • 1/3 cup Plain Almond Butter
  • 1 Tbsp. Soy Sauce
  • 1 Tbsp. Lime Juice
  • 1 Tbsp. Molasses
  • 1/2 tsp. Rice Wine Vinegar
  • 1/2 tsp. Sesame Oil
  • 2 Tbsp. Water
  • 2 Garlic Cloves (minced)
  • 1/4 tsp. Red Pepper Flakes.

Sweet Almond Butter Sauce
  1. Add sauce ingredients to a bowl and whisk to thoroughly combine.
  2. Set aside.
Pad Thai Noodle Bowl
  1. Cook 1 box of Modern Table Lentil Penne Pasta according to instructions on box.
  2. Cook chicken breasts and chop into bite-sized squares.
  3. Combine cooked pasta, red pepper, carrot shreds, cabbage, cilantro and chicken in a large bowl and add in a couple of Tbsp. of sauce. Toss to thoroughly coat.

  4. Divide between 2-3 bowls, drizzle with extra sauce, and garnish with additional cilantro, peanuts, and sesame seeds as desired.

  5. Enjoy!
