Mexican Rotini Pasta Salad
This south-of-the-border pasta salad combines our
Lentil Rotini pasta with a zesty cilantro-lime dressing, for a nutritious meal that's bursting with flavor.
Pasta Salad
- 1 box of Modern Table Lentil Rotini
- Cherry tomatoes, halved
- 1 medium red onion, diced
- 1 can of corn, drained
- 1 can of black beans, rinsed and drained
- 1/2 diced avocado
Cilantro Dressing
- 1/2 diced avocado
- 1/2 cup cilantro, chopped leaves and stems
- 1 clove of garlic
- 1/2 teaspoon salt
- Pepper to taste
- Juice from 2 limes
- 1/2 cup Olive Oil
Buy the Noodles
- Prepare Modern Table Lentil Rotini Pasta as directed on package.
- While Pasta is boiling, make dressing. Combine one half of diced avocado (reserve other half for pasta), cilantro, garlic, salt, pepper, lime juice, and olive oil in a mini processor until well blended and creamy.
- When pasta is finished, drain and place in large serving bowl. Add cherry tomatoes, onion, corn, beans and other half of diced avocado to bowl. Gently fold into pasta.
- Add cilantro dressing, stir to coat.
- Serve immediately.
