Pasta Salad

  • 1 box of Modern Table Lentil Rotini
  • Cherry tomatoes, halved
  • 1 medium red onion, diced
  • 1 can of corn, drained
  • 1 can of black beans, rinsed and drained
  • 1/2 diced avocado

Cilantro Dressing

  • 1/2 diced avocado
  • 1/2 cup cilantro, chopped leaves and stems
  • 1 clove of garlic
  • 1/2 teaspoon salt
  • Pepper to taste
  • Juice from 2 limes
  • 1/2 cup Olive Oil

  1. Prepare Modern Table Lentil Rotini Pasta as directed on package.
  2. While Pasta is boiling, make dressing. Combine one half of diced avocado (reserve other half for pasta), cilantro, garlic, salt, pepper, lime juice, and olive oil in a mini processor until well blended and creamy.
  3. When pasta is finished, drain and place in large serving bowl. Add cherry tomatoes, onion, corn, beans and other half of diced avocado to bowl. Gently fold into pasta.
  4. Add cilantro dressing, stir to coat.
  5. Serve immediately.
