Greek Protein Pasta Salad with Garden Veggies

This fresh take on a Greek garden salad packs equal parts flavor and complete protein! Enjoy garden-fresh veggies with a sweet and aromatic Greek drizzle, tossed together with crumbly feta for a healthy meal or side anytime!

  • 1/4 cup of Olive Oil
  • 1 Fresh Lemon, juiced
  • 2 Tbsp. Red-Wine Vinegar
  • 1 clove Garlic, minced
  • Black Pepper, to taste
  • 1/4 cup of Basil, chopped
  • 2 Tbsp. of Honey

    Salad Preparation

  1. Prepare Modern Table Lentil Penne according to directions on package and set aside
  2. Chop cucumber into halved-coins
  3. Cut Roma Tomatoes into quarters
  4. Dice unions
  5. Chop romaine lettuce into bite-sized pieces
  6. Chop feta cheese into small blocks
  7. Add all veggies to a large bowl and mix
  8. Dressing

  9. Add the following into a small mixing bowl:
  10. 6 Tbsp. olive oil
  11. 1/4 cup red wine vinegar
  12. 1 Tbsp. fresh lemon juice
  13. 1 clove garlic (minced)
  14. 1 tsp. basil
  15. 1 tsp. Honey
  16. Salt and pepper to taste
  17. Mix before adding to salad and toss together
  18. Serve and enjoy!
