Greek Protein Pasta Salad with Garden Veggies
This fresh take on a Greek garden salad packs equal parts flavor and complete protein! Enjoy garden-fresh veggies with a sweet and aromatic Greek drizzle, tossed together with crumbly feta for a healthy meal or side anytime!
Salad
Dressing
- 1/4 cup of Olive Oil
- 1 Fresh Lemon, juiced
- 2 Tbsp. Red-Wine Vinegar
- 1 clove Garlic, minced
- Black Pepper, to taste
- 1/4 cup of Basil, chopped
- 2 Tbsp. of Honey

Salad Preparation
- Prepare Modern Table Lentil Penne according to directions on package and set aside
- Chop cucumber into halved-coins
- Cut Roma Tomatoes into quarters
- Dice unions
- Chop romaine lettuce into bite-sized pieces
- Chop feta cheese into small blocks
- Add all veggies to a large bowl and mix
Dressing
- Add the following into a small mixing bowl:
- 6 Tbsp. olive oil
- 1/4 cup red wine vinegar
- 1 Tbsp. fresh lemon juice
- 1 clove garlic (minced)
- 1 tsp. basil
- 1 tsp. Honey
- Salt and pepper to taste
- Mix before adding to salad and toss together
- Serve and enjoy!
