Chorizo Mac n’ Cheese

Vegan Cheddar Mac with spicy chorizo sausage and scallions.

  • 1 box Classic Cheddar Style Modern Table Vegan Mac
  • Vegan Butter, 2 TBSP
  • Chorizo Sausage (Vegan or Non), 6 ounces
  • Scallions, thinly sliced, 2 each
  • Vegan Milk, 1/3 cup
Buy the Noodles
  • 1. Prepare Modern Table Pasta per package instructions
  • 2. Drain pasta
  • 3. Place Pot back on the stove and melt vegan butter
  • 4. Add chorizo. Cook for 5 minutes or until fully cooked
  • 5. Add ½ of the scallions, cook for 1 minute more
  • 6. Add vegan milk, sauce packets and cooked pasta. Mix well
  • 7. Place in serving dish and garnish with remaining scallions
