Chorizo Mac n’ Cheese
Vegan Cheddar Mac with spicy chorizo sausage and scallions.
- 1 box Classic Cheddar Style Modern Table Vegan Mac
- Vegan Butter, 2 TBSP
- Chorizo Sausage (Vegan or Non), 6 ounces
- Scallions, thinly sliced, 2 each
- Vegan Milk, 1/3 cup
Buy the Noodles
- 1. Prepare Modern Table Pasta per package instructions
- 2. Drain pasta
- 3. Place Pot back on the stove and melt vegan butter
- 4. Add chorizo. Cook for 5 minutes or until fully cooked
- 5. Add ½ of the scallions, cook for 1 minute more
- 6. Add vegan milk, sauce packets and cooked pasta. Mix well
- 7. Place in serving dish and garnish with remaining scallions
