Chilled-Penne Mango Salad With Honey-Lime Dressing

Pasta

  • 1 box Modern Table Lentil Penne Pasta
  • 2/3 cup Jicama (diced)
  • 2/3 cup Corn
  • 2/3 cup Mango (cubed)
  • 1/4 cup Red Onion (finely chopped)
  • 1-2 Cucumbers (sliced, then halved)
  • Salt
  • Pepper
  • Finely Chopped Cilantro

Dressing

  • 1/4 cup Olive Oil
  • 1/4 cup Lime Juice
  • 1 Garlic Clove (minced)
  • 1 Tbsp. + 1 tsp. Honey
  • 1/2 Tbsp. Cilantro (finely chopped)
  • Salt
  • Pepper
Buy the Noodles
Dressing
  1. Add dressing ingredients to a bowl and whisk to thoroughly combine.
  2. Set aside.
Pasta
  1. Prepare Modern Table Lentil Penne Pasta according to instructions on box.
  2. Combine cooked pasta, jicama, corn, mango, onion and cucumber in a large bowl with approx. half of the dressing. Toss to thoroughly coat.

  3. Divide between 2-3 bowls, drizzle with extra dressing, season with salt and pepper, and garnish with additional cilantro if desired.

  4. Enjoy!
