Chilled-Penne Mango Salad With Honey-Lime Dressing
This recipe features our Complete Protein Lentil Penne Pasta for the perfect balance between sweet and savory. Fresh veggies and a zesty honey-lime dressing take this quick and healthy meal to a whole new level of flavor!
Pasta
- 1 box Modern Table Lentil Penne Pasta
- 2/3 cup Jicama (diced)
- 2/3 cup Corn
- 2/3 cup Mango (cubed)
- 1/4 cup Red Onion (finely chopped)
- 1-2 Cucumbers (sliced, then halved)
- Salt
- Pepper
- Finely Chopped Cilantro
Dressing
- 1/4 cup Olive Oil
- 1/4 cup Lime Juice
- 1 Garlic Clove (minced)
- 1 Tbsp. + 1 tsp. Honey
- 1/2 Tbsp. Cilantro (finely chopped)
- Salt
- Pepper
Buy the Noodles
Dressing
- Add dressing ingredients to a bowl and whisk to thoroughly combine.
- Set aside.
Pasta
- Prepare Modern Table Lentil Penne Pasta according to instructions on box.
- Combine cooked pasta, jicama, corn, mango, onion and cucumber in a large bowl with approx. half of the dressing. Toss to thoroughly coat.
- Divide between 2-3 bowls, drizzle with extra dressing, season with salt and pepper, and garnish with additional cilantro if desired.
- Enjoy!
