Basil & Green Olive Penne Pasta Salad
Take advantage of all the healthy greens and complete proteins in this tasty take on pasta salad! The red-wine vinaigrette pairs perfectly with the deep aromatic basil and green olives for a healthy anytime-meal or side!
Pasta Salad
Dressing
- ¼ Cup red-wine vinegar
- ½ Cup Olive Oil
- 1 tsp. White Sugar
- Fresh Basil Leaves, (Chopped)
- Sesame Seeds, (Optional)
- Black Pepper
Buy the Noodles
Dressing
- Gather a small bowl and whisk and add the following:
- Add ¼ Cup Red-Wine Vinegar to bowl
- Add ½ Cup Olive Oil to bowl
- Add 1 tsp. White Sugar to bowl
- Add fresh chopped basil
- Add ground black pepper to taste
- Stir well and set aside
Pasta Salad
- Prepare 1 Box Modern Table Lentil Penne according to instructions on package and add to a large mixing bowl
- Add carrots to bowl
- Add micro-greens to bowl
- Rinse and add purple kale, (or spinach) to bowl
- Add olives to bowl
- Gently mix ingredients while adding dressing until lightly coated
- Serve and enjoy!
